The wheat in our pasta is grown by a pioneer co-operative in the Marche hills near the remarkable walled city of Urbino. The founder’s vision was to reinvigorate the countryside which was becoming de-populated and abandoned by bringing purpose and community back to his birth place – that purpose would be an organic wheat growing and pasta manufacture. We’re talking the late 60’s. Our pasta is made with hard durum wheat, pure spring water, slow drying and traditional bronze plates for a pasta that will perfectly complement all sauces.
