'These neat small sprats have an appealing, toasted, golden look and pleasing. light. smoky aroma. The texture is meaty but tender and the bones are soft and easily edible. The flavour of the fish is rich, delicately fishy and slightly sweet – we loved the quality of the EVOO which added even more richness and a touch of fruitiness, We liked the light smokiness which balanced well and didn't overpower the fish. '
