This recipe comes courtesy of @vickyskitchan and is a quick and easy umani packed combination of cooked spaghetti tossed with Japanese ingredients.
Soy butter sauce
▪️1/2 white onion▪️Butter▪️Dashi (or veg stock)▪️Garlic clove, minced▪️Rice wine vinegar▪️Light soy sauce▪️Salt + pepper ▪️Parmesan cheese

Boil spaghetti in a pot of hot water and add a pinch of salt. In a pan, add olive oil and fry the mushrooms until softened - set aside. In the same pan, add 2 knobs of butter, onion and garlic and mix for a few minutes. Add in 1/4 cup dashi, rice wine vinegar and soy sauce and simmer at a low heat. Mix in the mushrooms, salt and pepper and cheese and toss around. Add a bit more butter for extra flavour and pour in your cooked spaghetti.Garnish with your toppings and serve.
