This is what you need:
- It's Soya Good fajita strips
- soy sauce
- 1 tspn of paprika
- 1 tspn of cumin
- 1 tspn of coriander
- chopped garlic
- lime juice
- extra virgin olive oil
- 1 ripe avocado
What to do…
First, place your Soya Good Fajita strips in a bowl, cover them with boiling water and let them soak for 5 minutes. After that, let the strips cool and squeeze out the excess water. Remove the excess water from the bowl and add a splash of soy sauce for a bit of umami and colour.
For the seasoning combine the paprika, cumin, coriander, garlic and lime juice in a bowl. Add a splash of olive oil and a few drops of tabasco and mix it all together.
Use half the spice mix to coat your soya strips. With the other half coat your chopped peppers and onions.
Fry the peppers and onions in a pan until soft. Then throw in your soya strips and cook for another 3-5 mins.
For the guacamole, start by mashing your avocado in a bowl. Add a drizzle of olive oil, squeeze of lime, chopped garlic and salt and mix it all together.
Finally, serve the quacamole and fajita mix with a heated tortilla.
