X4 Sweet Potatoes
X2 Fish4ever Fair Trade Yellow Fin Tuna (in organic olive oil)
4-6 tbsp Mayonnaise or Creme Fraiche (plus extra for topping)
100-150g Extra Mature Cheddar Cheese
2 tbsp Chopped Parsley
1.5 tbsp Chopped Capers (optional)
4 handful of Shredded Sprouts or Kale
2 tbsp Toasted Mixed Seeds
What to do:
Heat the oven to 190˚C and roast the sweet potato for 45 minutes to 1 hour, until the flesh is totally soft. Whilst the potato is cooking, mix together the tuna, mayonnaise, cheese, chopped parsley and capers (if using).
When the potato is cooked, scoop out the flesh and add it to the tuna mix. Stuff the potato and tuna mix back into the potato skin and keep them in the oven until ready to serve.
Fry off the shredded sprouts or roast the kale in the oven until crispy. When ready to eat, serve the potato with a dollop of creme fraiche, topped with the crispy sprouts or kale and toasted seeds.
