This was @hannahkooktzo’s first time to try polenta and what should we say, she made an amazing dish with it which is absolutely tasty!The polenta was served with chicken zucchini enchiladas, so see below how you can prepare these beauties yourself!
Ingredients
3 zucchinis
3 chicken breast
Salt
1 tsp chili
1 tsp cumin
1 tsp oregano
2 garlic cloves
2 red onions
Coriander to taste
2 jars of salsa sauce
Grated cheese
Organico Polenta
Method
Fry the chicken breast and then pull it apart to make pulled chicken.Preheat the oven to 175°C.
Slice the courgettes with a cheese slicer or a peeler and heat them in the oven.
Heat up a pan to fry the garlic and onion in oil.Then add the pulled chicken, salt, chili, cumin, oregano and some coriander while stirring well.
Add 1 jar of salsa sauce and mix everything well.
Fill the 2nd jar of salsa sauce into a baking dish, but keep a bit in for the topping in the end.Roll the chicken-mix in the courgette slices and put them in the baking dish, on top of the sauce.
Cover the courgette enchiladas with your leftover sauce and the grated cheese.Then bake for about 20 min.
While the enchiladas are getting ready, boil the polenta as per package instructions.
Also great to enjoy as a big dinner with your whole family or friends.
