Poached Egg & Olive Polenta Stack

Baked Haddock Pasta and Greens
Thanks to @libbyhorsley_ for creating this meal using our Polenta!

She used the following things: 
Organico quick Polenta 
Eggs 
watercress 
spinach 
vine tomatoes 
Organico Extra Virgin Olive Oil 

To make the polenta slices (which are basically a polenta chip but now a versatile any meal dish!) you cook the polenta according to instructions and then mix with chopped olives plus seasoning and some olive oil. Before leaving to cool pressed flat in a tray in the fridge.Once set, chop into squares and pan fry in @organicorealfoods olive oil and fresh rosemary. 
They were the tastiest layers to this brunch stack!
