Pasta with Avocado Pesto

Here comes a recipe by our fantastic German Blogger @foodisay:A delicious and light pasta with avocado pesto – perfect for warm summer evenings!

The recipe serves about 4 people, depending on how hungry you are of course.

Ingredients

Pasta of your choice

2 avocados

3 tbsp Organico Organic Extra Virgin Olive Oil

2 tbsp pine nuts

30g parmesan cheese

1/2 bunch of parsley

Juice of 1/2 lemon

Salt & pepper

Instructions

1. Cook the pasta as per package instructions.

2. Meanwhile combine all other ingredients with a mixer until smooth.

3. Mix together the pasta and sauce.
