Here’s another fantastic recipe of the German blogger @regina_healthylicious.
She used our organic vegan pesto to add some mediterranean flavour to her bowl.
The recipe below makes two servings with 360 kcal per serving including cauliflower and cucumbers as sides.
Ingredients:
1 pack of tofu ( about 125g)
1 small zucchini
1 small aubergine
1 small red pepper
2 tbsp organic vegan pesto
2 tsp oil
2 tsp cornstarch
salt, pepper, sesame, chili powder
Instructions:
For the aubergine fries preheat the oven to 420°F (215°C).Cut one half of the aubergine into thin fries, then mix with 1 tsp oil, cornstarch and salt.
Spread the fries on a baking tray and bake for 20 minutes.Flip them over and bake for another 20 minutes.Afterwards season with chili powder, pepper etc.
While the fries are in the oven, cut tofu, zucchini, red pepper and the other half of the aubergine into chunks.
Fry the chunks in 1 tsp oil until slightly browned.
Put the tofu and veggie mixture into a bowl and mix with the organic vegan pesto.
Add aubergine fries and other veggies as you like. In this case for example roasted cauliflower and cucumber can be recommended.
