Homemade Baba Ghanoush
Who’s in for a Lebanese inspired lunch? @afterunicooking created this amazing recipe for homemade Baba Ghanoush using our Organico extra virgin olive oil. 

Ingredients: 
2 eggplants (medium to large) 
Organico extra virgin olive oil 
3 tbsp lemon juice 
1/2 tsp turmeric 
2 tbsp tahini 
2 cloves of garlic, crushed or finely chopped 
salt and pepper 
paprika to taste 
handful of parsley, chopped 
sea salt, olive oil and parsley to garnish 

Method: 
Cut the eggplants in half and sprinkle the insides with olive oil.Lay them face down on a baking sheet and cook in the oven for 30-40 minutes at 180°C.When the eggplant flesh is soft, take them out of the oven and leave to cool.Scoop out the flesh and add to a bowl.Squeeze as much liquid out of the eggplant as you can.Add lemon juice, turmeric, tahini, a tsp of olive oil and garlic.Season with salt, pepper and paprika as desired.Mix with a fork, add fresh parsley and blend everything together.Garnish with sea salt, olive oil and parsley. Enjoy!
