Here’s an easy, vegan and super healthy pasta dish that @afterunicooking created.It is perfect to eat as a quick dinner or lunch and also good to take to work the next day.Below you find the ingredients and instructions how to prepare this beautiful meal.
INGREDIENTS PER SERVING:
100g Organico Fusilli
For the sauce:
1/2 of an avocado
4 tbsp of fresh basil
2 tbsp of nutritional yeast
Juice of 1/2 a lemon
Salt and pepper
Vegetables:
1/2 of a white onion
3 mushrooms
50g of peas
1/2 a tsp of coconut oil
METHOD:
Cook the pasta.Blend the ingredients for the sauce and then set aside.In the meantime fry the vegetables in the coconut oil.When they are done, add the blended avocado “pesto” and 1-2 tbsp of pasta water.Mix the pasta & sauce and then enjoy your meal!
