Kale is one of the most powerful superfoods and a perennial favourite, especially during the winter season. It's highly nutritious and can be used in lots of different ways. @life_balance_beth recommends a crispy version on Instagram and combines it with our sustainable tinned sardines. Here's all you need:
- Kale
- Red cabbage
- Avocado
- Mozzarella
- Kidney beans
- Fish4Ever tinned Sardines
- Red pepper
- Pine-nuts
What to do…
Roughly chop your kale, toss in olive oil and any seasoning of your choice, e.g. some pepper, salt and cayenne pepper. Bake in the oven until just crisp.
Roughly chop your red cabbage, avocado and mozzarella and throw together with the kale into a dish.
Roughly chop your red pepper, add drained kidney beans and tinned sardines (mine came in a tomato sauce), stir together and add to your salad bowl.
Top with some toasted pine nuts, pumpkin seeds or similar and enjoy.
