Chickpea, Buckwheat and

Artichoke Pizza

This recipe from _naturalnourishment is not only for those of you eating gluten-free or vegan, but for all of us as it delivers a super delicious and healthy version of pizza!

For serving 3-4 with a nutritious meal you need the following:

INGREDIENTS

  • CRUST
  • 120g chickpea flour
  • 130g buckwheat flour
  • 1tsp bicarbonate of soda
  • Pinch of salt
  • 1tsp black pepper
  • 40ml avocado oil
  • 185ml warm water
  • SAUCE
  • 2 large tomatoes
  • 1 clove garlic
  • 1/2 c soaked macadamia or cashew nuts
  • salt
  • pepper
  • 2 tbsp nutritional yeast
  • TOPPINGS
  • Organico Artichoke Hearts
  • Organico Grilled Peppers
  • Tenderstem broccoli
  • Caramelised red onions

DIRECTIONS

  1. Add all your crust ingredients to a bowl, beat well with a spoon for 5 mins. Leave to sit for 15 mins.
  2. Preheat your oven to 200C.
  3. Meanwhile add all your sauce ingredients to a blender, purée until smooth.
  4. Spread your batter onto 2 silicone mat lined trays, top with the sauce & add your toppings.
  5. 5. Cook for 8-12 mins until golden & crisp.
